Our Adelaide Hills vineyards grow elegant, complex Chardonnays with clarity
of fruit and regional expression.
The season began very dry, with a warm spring promoting strong canopy growth, and a moderate November ensuring good fruit set. Timely January rains refreshed the vines and allowed for good yields without impacting quality. A very mild February with cold nights slowed ripening, and warm March days with cool nights helped concentrate bright, elegant flavours while retaining long, fine acidity.
Select parcels of fruit were hand picked and
whole-bunch pressed before fermentation in small batches using a
combination of wild and cultured yeast and natural malo-lactic fermentation.
The wine was left to mature on lees for nine months in 80% seasoned and 20% new French oak barrels. Regular barrel stirring helped build texture
Gold Label Chardonnay is great with roast chicken with pancetta and thyme stuffing, or pork fillet with grilled nectarines.
Enjoyable on release, or careful cellaring in the short to medium term
will reward drinkers seeking increased complexity.
